Ayuh, this is the kind of recipe in which only you can decide
on the appropriate quantity of general purpose potatoes you're
going to use... SECOND, ask yourself how many irregularly sized
chunks of roasted potato would you eat at a meal. Using that
as a basis for calculating, double the quantity and
you'll probably cut up enough regular sized potatoes into
irregular sized chunks ( bigger than square inch but not symmetrical)
to feed one person. Kids love them, too.. .
- Get a gallon sized baggie or a large mixing bowl
- Empty the contents of one package powdered onion soup
mix into the baggie ( or bowl).
- Add a little more than a quarter cup of olive oil.
- Put the potatoes in the baggie, seal and shake until all
potato surfaces are covered.
- Put potatoes into a metal baking pan ( spray or brush
the surface on which the potatoes will sit) and put in an
oven preheated to 350 degrees.
- Turn potatoes after 20 minutes; heat for another 20. Depending
on your oven, you might want to check before 40 minutes
have elapsed.
When done, the potatoes should be crispy and browned on all
sides.
There should be a delicious smell wafting into the dining
area. Enjoy!
